A Hearty Chicken Pot Pie

Today, I made my very first Chicken Pot Pie. It was quite a long process since I had to cook the ingredients for the filling which included carrots, corn, onions, spices and chicken. Afterwards I had to make a roux (a roux is a blend of butter and flour cooked in low heat), to be mixed with milk and chicken stock. All dry ingredients were then added to the roux mixture.

And because I so love to do things from scratch, I made my own pie crust as well. It was definitely fun!

Here you can see the Chicken Pot Pie in the oven. It took 30 minutes to bake!


After 40 minutes of waiting, Ta - Da! Hmm.. Not bad for a first timer? hehe.

The visuals could be better. Maybe next time I'd need to add more greens (i.e. celery, green peas) for a livelier color of the filling, and lengthen the baking time to have a more golden crust. Any other suggestions? :)

As for the taste, my parents told me I should make more of it, I guess they liked it. So, at the end of the day, I was left with this (see picture below) and a grateful heart.



It's truly a joy to serve my family. I hope they were able to taste the most important ingredients in this Hearty Chicken Pot Pie, my love and joy. :)

  1. joycee! you could glaze the top with a mixture of butter and egg to give it that hearty, tanned glow. adding celeries and peas are a great option; but you can also try sauteed prosciutto with broccoli.
